Ingredients

4 boneless, skinless chicken breasts (or thighs)

1–1.5 lbs baby potatoes, halved

1 packet ranch seasoning mix (or ~3 tbsp homemade ranch seasoning)

1 can (10.5 oz) cream of chicken soup
OR 1 cup heavy cream or broth if you prefer lighter -
½ cup sour cream (optional, stirred in at the end for extra creaminess)

½ cup shredded cheddar cheese (optional)

2 tbsp butter, sliced

Salt & pepper to taste

Fresh parsley or chives for garnish (optional)
🥣 Instructions

Prep the crockpot: Lightly spray with nonstick spray.

Add potatoes: Put baby potatoes at the bottom of the crockpot.

Place chicken on top of the potatoes.

Sprinkle ranch seasoning evenly over chicken and potatoes.

Add soup & butter:

Spread the cream of chicken soup over the chicken.

Top with butter slices.

Cook:
-
Low: 6–7 hours
-
High: 3–4 hours
Chicken should be tender and potatoes soft.

Optional finishing:

Stir in sour cream for creaminess.

Add cheddar cheese on top and let melt for 5–10 minutes.

Serve: Break chicken into chunks or serve whole. Spoon sauce over the top.
