Crock Pot Smothered Beef Burritos 🌯🔥

Tender shredded beef, melty cheese, and a rich sauce—all made effortlessly in your slow cooker!

🧾 Ingredients:

For the Beef Filling:

  • 2 lbs chuck roast or stew beef, trimmed and cut into chunks

  • 1 (1 oz) packet taco seasoning (or homemade blend)

  • 1 (10 oz) can red enchilada sauce

  • 1 (4 oz) can diced green chiles

  • ½ cup beef broth (or water)

  • 1 tsp cumin

  • 1 tsp garlic powder

  • ½ tsp onion powder

  • Salt & pepper to taste

For Assembly & Topping:

  • 8-10 large flour tortillas (burrito-size)

  • 2 cups shredded Mexican cheese blend

  • 1 (15 oz) can refried beans (optional, for extra heartiness)

  • 1 cup sour cream (for serving)

  • Fresh cilantro, chopped (for garnish)

  • Diced tomatoes, avocado, or sliced jalapeños (optional toppings)


👩‍🍳 Instructions:

1️⃣ Slow Cook the Beef:

  1. Place beef chunks in the crock pot. Sprinkle with taco seasoning, cumin, garlic powder, onion powder, salt, and pepper.

  2. Pour in enchilada sauce, green chiles, and beef broth. Stir gently.

  3. Cover and cook on:

    • Low for 6-8 hours (fall-apart tender)

    • High for 3-4 hours (if short on time).

2️⃣ Shred the Beef:

  1. Once cooked, shred the beef with two forks directly in the pot. Stir to coat with the sauce.

3️⃣ Assemble the Burritos:

  1. Warm tortillas slightly (microwave for 15 sec or heat on a dry skillet).

  2. Spread refried beans (if using) down the center of each tortilla.

  3. Top with shredded beef and a sprinkle of cheese.

  4. Fold the sides in, then roll tightly into burritos.

4️⃣ Smother & Serve:

  1. Place burritos seam-side down in a baking dish.

  2. Pour remaining crock pot sauce over the top and sprinkle with extra cheese.

  3. Broil in the oven for 2-3 mins until cheese is melted and bubbly.

  • Serve with sour cream, cilantro, and your favorite toppings.
