✨ Crispy Potato Muffin Cups ✨

The ultimate way to upgrade mashed potatoes! Golden, crispy edges with a creamy center—perfect as a side dish or appetizer. Customize with your favorite mix-ins!

🥔 Ingredients (Makes 12 cups)

Base:

  • 4 cups mashed potatoes (leftover or fresh)

  • 2 tbsp butter (for mixing)

  • 1/4 tsp salt (adjust to taste)

Mix-In Ideas (Pick 1-2):

  • Cheesy: 1/2 cup shredded cheddar + 2 tbsp Parmesan

  • Bacon & Chive: 1/3 cup cooked bacon + 2 tbsp chopped chives

  • Garlic Herb: 2 minced garlic cloves + 1 tbsp rosemary

  • Loaded: Sour cream, green onions, and crumbled bacon

Topping:

  • 2 tbsp melted butter or olive oil (for brushing)

👩‍🍳 Instructions

1️⃣ Prep:

  • Preheat oven to 375°F (190°C). Grease a 12-cup muffin tin generously.

  • Mix mashed potatoes with butter, salt, and your chosen add-ins (cheese, bacon, etc.).

2️⃣ Fill & Shape:

  • Spoon potato mixture into muffin cups, pressing down lightly.

  • Run a fork over the tops to create ridges (for extra crispiness!).

  • Brush with melted butter or oil.

3️⃣ Bake:

  • Bake 25-30 mins until tops are golden and edges are crispy.

  • Let cool 5 mins, then gently loosen with a knife.

🍽️ Serving Ideas

  • Appetizer: Top with sour cream and chives.

  • Side Dish: Serve with roast chicken or steak.

  • Brunch: Add a poached egg on top!

💡 Pro Tips

✅ Crispiest results: Use a metal muffin tin (not silicone).
✅ Make ahead: Assemble unbaked and refrigerate overnight.
✅ Extra flavor: Sprinkle with breadcrumbs before baking.
