Crispy Nacho Egg Rolls

Crunchy, cheesy, and packed with taco flavor—perfect for game day, parties, or cravings!


📝 Ingredients

Filling

  • 1 lb (450g) ground beef (or substitute with chicken/turkey)

  • 1 packet (1 oz) taco seasoning (or homemade blend: 1 tsp each chili powder, cumin, paprika + ½ tsp garlic powder, onion powder, salt)

  • 1 cup shredded cheddar cheese (or Mexican blend)

  • ½ cup diced onions

  • ½ cup black beans, drained/rinsed (optional)

  • ½ cup corn kernels (fresh, canned, or frozen)

  • ¼ cup diced jalapeños (adjust to spice preference)

  • 2 tbsp tomato paste or salsa

  • 1 tbsp lime juice

Wrapping & Frying

  • 12-15 egg roll wrappers (or wonton wrappers for smaller rolls)

  • 1 egg (beaten, for sealing)

  • Oil for frying (vegetable, canola, or air fryer spray)

For Serving

  • Nacho cheese dip

  • Sour cream

  • Guacamole

  • Salsa or pico de gallo


👩‍🍳 Instructions

1. Cook the Filling

  • Brown ground beef in a skillet over medium heat. Drain excess fat.

  • Add onions, jalapeños, taco seasoning, tomato paste, lime juice, and 2 tbsp water. Cook 2-3 mins.

  • Stir in black beans, corn, and cheese. Let cool slightly.

2. Assemble Egg Rolls

  • Lay an egg roll wrapper diagonally. Place 2-3 tbsp filling near the center.

  • Fold bottom corner over filling, tuck sides in, then roll tightly. Seal edges with beaten egg.

  • Repeat until all filling is used.

3. Fry to Crispy Perfection

  • Deep Fry: Heat oil to 350°F (175°C). Fry rolls 2-3 mins per side until golden. Drain on paper towels.

  • Air Fryer: Spray rolls with oil. Cook at 375°F (190°C) for 8-10 mins, flipping halfway.

  • Oven: Brush with oil, bake at 400°F (200°C) for 15-20 mins (flip halfway).

4. Serve Hot

  • Slice diagonally and serve with nacho cheese, sour cream, guacamole, or salsa!

  • Crispy Hack: Double-fry for extra crunch (fry once, cool, then refry before serving).

  • Make Ahead: Freeze unbaked rolls; fry straight from frozen (add 1-2 mins cook time).
