Crispy Fried Croquettes

Golden, crunchy outside with a creamy, flavorful filling—perfect as a snack or appetizer!

Ingredients:

(Makes 12–15 croquettes)

For the Filling:

  • 2 cups mashed potatoes (or cooked, mashed veggies like sweet potato, pumpkin, or cauliflower)

  • 1 cup cooked meat (shredded chicken, ground beef, ham, or tuna) or cheese (cheddar, mozzarella, or béchamel for a creamy center)

  • 1 small onion, finely chopped (optional, sautéed until soft)

  • 1 clove garlic, minced

  • 2 tbsp butter or olive oil

  • ¼ cup flour (for binding)

  • ½ tsp salt, ¼ tsp black pepper, ½ tsp paprika (or your favorite seasoning)

  • 2 tbsp fresh herbs (parsley, chives, or thyme)

For Breading & Frying:

  • ½ cup all-purpose flour

  • 2 eggs, beaten

  • 1 cup breadcrumbs (or panko for extra crunch)

  • Oil for deep-frying (vegetable, canola, or sunflower oil)


Instructions:

1. Make the Filling

  • In a pan, melt butter and sauté onion and garlic until soft (skip if using pre-cooked meat).

  • Mix in mashed potatoes, meat/cheese, seasonings, and herbs. Cook for 2–3 mins.

  • Stir in flour to bind. Let the mixture cool slightly.

2. Shape the Croquettes

  • Scoop 2 tbsp of the mixture and roll into cylinders (or small balls).

  • Chill in the fridge for 20–30 mins (helps them hold shape).

3. Bread the Croquettes

  • Roll each croquette in flour, dip in beaten egg, then coat with breadcrumbs.

  • For extra crispiness, double-coat by repeating the egg and breadcrumb step.

4. Fry to Perfection

  • Heat oil to 350°F (175°C) in a deep pan or fryer.

  • Fry croquettes in batches for 2–3 mins until golden brown. Drain on paper towels.

5. Serve Hot!

  • Enjoy with dips like aioli, ketchup, or spicy mayo.


Tips & Variations:

🔥 Air Fryer Option: Spray with oil and air-fry at 400°F (200°C) for 10–12 mins, flipping halfway.
🧀 Cheesy Surprise: Stuff with a mozzarella cube for a melty center.
🌱 Veggie Version: Skip meat—use mushrooms, corn, or spinach instead.

These croquettes are irresistibly crispy outside and creamy inside—great for parties or snacks!
