Ingredients:
(Makes 12–15 croquettes)
For the Filling:

2 cups mashed potatoes (or cooked, mashed veggies like sweet potato, pumpkin, or cauliflower)

1 cup cooked meat (shredded chicken, ground beef, ham, or tuna) or cheese (cheddar, mozzarella, or béchamel for a creamy center)

1 small onion, finely chopped (optional, sautéed until soft)

1 clove garlic, minced

2 tbsp butter or olive oil

¼ cup flour (for binding)

½ tsp salt, ¼ tsp black pepper, ½ tsp paprika (or your favorite seasoning)

2 tbsp fresh herbs (parsley, chives, or thyme)
For Breading & Frying:

½ cup all-purpose flour

2 eggs, beaten

1 cup breadcrumbs (or panko for extra crunch)

Oil for deep-frying (vegetable, canola, or sunflower oil)
Instructions:
1. Make the Filling

In a pan, melt butter and sauté onion and garlic until soft (skip if using pre-cooked meat).

Mix in mashed potatoes, meat/cheese, seasonings, and herbs. Cook for 2–3 mins.

Stir in flour to bind. Let the mixture cool slightly.
2. Shape the Croquettes

Scoop 2 tbsp of the mixture and roll into cylinders (or small balls).

Chill in the fridge for 20–30 mins (helps them hold shape).
3. Bread the Croquettes

Roll each croquette in flour, dip in beaten egg, then coat with breadcrumbs.

For extra crispiness, double-coat by repeating the egg and breadcrumb step.
4. Fry to Perfection

Heat oil to 350°F (175°C) in a deep pan or fryer.

Fry croquettes in batches for 2–3 mins until golden brown. Drain on paper towels.
5. Serve Hot!
