Crème Brûlée Cheesecake is a decadent dessert that combines the creamy richness of cheesecake with the caramelized sugar topping of classic crème brûlée. Here’s a delicious recipe to make it at home:


Crème Brûlée Cheesecake Recipe

Prep Time: 30 mins | Cook Time: 1 hour | Chill Time: 4+ hours | Servings: 10-12

Ingredients:

For the Crust:

  • 1 ½ cups graham cracker crumbs (or digestive biscuits)

  • ¼ cup granulated sugar

  • 6 tbsp unsalted butter, melted

For the Cheesecake Filling:

  • 24 oz (3 blocks) cream cheese, softened

  • 1 cup granulated sugar

  • 1 cup sour cream (or heavy cream)

  • 3 large eggs

  • 1 tbsp vanilla extract

  • ½ tsp salt

For the Crème Brûlée Topping:

  • ½ cup granulated sugar (for caramelizing)

  • A kitchen torch (or broiler)


Instructions:

1. Prepare the Crust:

  • Preheat oven to 325°F (160°C).

  • Mix graham cracker crumbs, sugar, and melted butter. Press firmly into a 9-inch springform pan (bottom and slightly up the sides).

  • Bake for 10 minutes, then let cool.

2. Make the Cheesecake Filling:

  • Beat cream cheese and sugar until smooth.

  • Add sour cream, vanilla, and salt; mix well.

  • Add eggs one at a time, mixing just until combined (don’t overmix).

  • Pour filling over the crust and smooth the top.

3. Bake the Cheesecake:

  • Place the pan in a water bath (wrap the bottom in foil to prevent leaks).

  • Bake for 50-60 minutes until the edges are set but the center is slightly jiggly.

  • Turn off the oven, crack the door, and let it cool for 1 hour inside.

  • Chill in the fridge for at least 4 hours (preferably overnight).

4. Caramelize the Top (Crème Brûlée Finish):

  • Sprinkle a thin, even layer of sugar over the chilled cheesecake.

  • Use a kitchen torch to melt the sugar until golden and crispy.

  • No torch? Place under the broiler for 1-2 minutes, watching closely.

  • Let the sugar harden (5 minutes), then serve!


Tips for Success:

✔ Use room-temperature cream cheese for a smooth filling.
✔ Avoid overbaking—the center should still wobble slightly.
✔ Chill thoroughly before torching to prevent melting.
✔ For extra flavor, add a pinch of cinnamon to the crust or a splash of bourbon to the filling.
