🔸 For the Chicken:

  • 2 large boneless, skinless chicken breasts (or 4 small ones)
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt & black pepper, to taste
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 4 cloves garlic, minced

🔸 For the Alfredo Sauce:

  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 1½ cups heavy cream
  • ¾ cup grated parmesan cheese (fresh is best!)
  • Salt & pepper, to taste
  • Optional: pinch of nutmeg or crushed red pepper flakes

🔸 For the Pasta:

  • 12 oz linguine, cooked al dente and drained
  • ¼ cup pasta water (reserve from boiling noodles, helps thin sauce if needed)
  • Fresh parsley or basil, for garnish
  • Extra grated parmesan, for serving

👨‍🍳 Instructions

1. Cook the Linguine

  • Boil linguine in salted water according to package instructions.
  • Reserve ¼ cup of pasta water before draining. Set pasta aside.

2. Prepare the Chicken

  1. Slice large chicken breasts in half horizontally to make thinner cutlets.
  2. Season both sides with salt, pepper, garlic powder, and Italian seasoning.
  3. In a large skillet, heat olive oil and butter over medium heat.
  4. Add chicken and sear 4–5 minutes per side, or until golden brown and cooked through (internal temp: 165°F).
  5. In the last minute, add minced garlic to the pan to lightly brown.
  6. Remove chicken from skillet and let it rest. Slice into strips.

3. Make the Alfredo Sauce

  1. In the same skillet, melt 2 tbsp butter over medium heat.
  2. Add garlic and sauté for 1 minute until fragrant (do not burn).
  3. Pour in heavy cream, bring to a gentle simmer (not a boil).
  4. Stir in parmesan cheese, whisking constantly until melted and smooth.
  5. Season with salt, pepper, and optional nutmeg or chili flakes.

🔥 If the sauce is too thick, thin with a bit of reserved pasta water.


4. Combine Pasta & Sauce

  • Add cooked linguine to the Alfredo sauce.
  • Toss until the pasta is fully coated and glossy.
  • Add sliced chicken on top or toss it all together.

5. Garnish & Serve

  • Plate with extra parmesan and fresh parsley or basil.
  • Serve warm with garlic bread or a crisp salad.
