creamy Butterscotch Heaven Pie

A dreamy, no-bake pie with a velvety butterscotch filling, fluffy whipped cream, and a buttery crust. Perfect for butterscotch lovers!


Ingredients

For the Crust:

  • 1 ½ cups graham cracker crumbs (or crushed digestive biscuits)

  • ⅓ cup granulated sugar

  • 6 tbsp melted butter

  • Pinch of salt

For the Butterscotch Filling:

  • 1 cup (200g) brown sugar (packed, light or dark)

  • ¼ cup (60ml) water

  • ½ cup (115g) unsalted butter

  • 1 cup (240ml) heavy cream (divided)

  • 1 tsp vanilla extract

  • Pinch of salt

  • 1 (8oz/225g) package cream cheese, softened

  • 1 (3.4oz/96g) box instant butterscotch pudding mix (optional, for extra flavor & thickness)

For the Topping:

  • 1 cup (240ml) cold heavy cream

  • 2 tbsp powdered sugar

  • ½ tsp vanilla extract

  • Butterscotch chips or caramel drizzle (for garnish)


Instructions

1. Make the Crust:

  • Mix graham cracker crumbs, sugar, melted butter, and salt until combined.

  • Press firmly into a 9-inch pie dish, covering the bottom and sides.

  • Chill in the fridge for 30 minutes (or freeze for 10 mins to set faster).

2. Prepare the Butterscotch Filling:

  • In a saucepan, combine brown sugar and water. Heat over medium, stirring until sugar dissolves.

  • Bring to a gentle boil (without stirring) for 3–4 minutes until slightly thickened.

  • Remove from heat and whisk in butter until melted. Slowly add ½ cup heavy cream, vanilla, and salt. Let cool slightly.

  • In a bowl, beat cream cheese until smooth. Gradually mix in the butterscotch sauce.

  • (Optional) Fold in dry pudding mix for extra richness.

  • Whip the remaining ½ cup heavy cream to stiff peaks, then gently fold into the filling.

3. Assemble the Pie:

  • Pour filling into the chilled crust and smooth the top.

  • Refrigerate for at least 4 hours (or overnight) until firm.

4. Add the Topping:

  • Whip 1 cup heavy cream with powdered sugar and vanilla until fluffy.

  • Spread or pipe over the chilled pie.

  • Garnish with butterscotch chips or caramel drizzle.


Tips for Success

✅ Use real butterscotch (not just caramel) for the best flavor.
✅ Chill thoroughly so the pie slices cleanly.
✅ No pudding mix? Add 1 tbsp cornstarch to the filling for stability.
✅ For a nutty twist: Add ½ cup toasted pecans to the crust.


Variations

  • Chocolate-Butterscotch: Add a layer of chocolate ganache under the filling.

  • Salted Caramel Butterscotch: Sprinkle flaky sea salt on top.

  • Banana Butterscotch: Layer sliced bananas under the filling.
