Crispy & Chewy Coconut Sticks

Ingredients:

1 ½ cups (150g) shredded coconut (unsweetened or sweetened)

½ cup (100g) granulated sugar

½ cup (115g) butter, melted

1 egg white (or 1 whole egg for a softer texture)

1 tsp vanilla extract

¼ tsp salt
(Optional: Add 1 tbsp flour for extra binding or ½ tsp cardamom for a Swedish twist!)
Instructions:

Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

Mix ingredients: In a bowl, combine shredded coconut, sugar, melted butter, egg white, vanilla, and salt. Stir until sticky and well-blended.

Option 1 (Crispy): Roll teaspoon-sized portions into thin logs (~3 inches long).
