Classic Homemade Strawberry Cake

This fluffy, moist, and bursting with fresh strawberry flavor cake is a showstopper! Made with real strawberries in the batter and topped with creamy frosting, it’s perfect for birthdays, summer parties, or anytime you crave something sweet and fruity.


Ingredients

For the Strawberry Cake:

  • 2½ cups (315g) all-purpose flour

  • 2 tsp baking powder

  • ½ tsp baking soda

  • ½ tsp salt

  • ½ cup (115g) unsalted butter, softened

  • 1½ cups (300g) granulated sugar

  • 2 large eggs, room temperature

  • ⅓ cup (80g) sour cream or Greek yogurt

  • 1 tsp vanilla extract

  • ½ cup (120ml) whole milk

  • 1½ cups (225g) fresh strawberries, pureed (about 10–12 berries)

For the Strawberry Cream Cheese Frosting:

  • 8 oz (225g) cream cheese, softened

  • ½ cup (115g) unsalted butter, softened

  • 3½ cups (420g) powdered sugar

  • ¼ cup (60g) strawberry puree (from reserved puree)

  • 1 tsp vanilla extract

  • Pinch of salt

Optional Garnish:

  • Fresh strawberry slices

  • Sprinkles


Instructions

1. Prep & Preheat

  • Preheat oven to 350°F (175°C). Grease and flour two 8-inch round pans (or line with parchment).

  • Puree strawberries in a blender/food processor until smooth. Set aside ¼ cup for frosting.

2. Make the Cake Batter

  1. Whisk flour, baking powder, baking soda, and salt in a bowl.

  2. In another bowl, beat butter + sugar until fluffy. Add eggs, sour cream, and vanilla.

  3. Alternate adding dry ingredients and milk, mixing until just combined.

  4. Fold in 1¼ cups strawberry puree (batter will be thick).

3. Bake

  • Divide batter between pans. Bake 25–30 mins until a toothpick comes out clean.

  • Cool in pans 10 mins, then transfer to a wire rack.

4. Make the Frosting

  1. Beat cream cheese + butter until smooth.

  2. Gradually add powdered sugar, then mix in strawberry puree, vanilla, and salt.

5. Assemble & Decorate

  1. Place one cake layer on a plate. Spread with ½ cup frosting.

  2. Top with second layer. Frost the top and sides.

  3. Garnish with strawberry slices or sprinkles.
