Classic Creamy Macaroni Salad 🧀🥗

This old-fashioned macaroni salad is the perfect balance of creamy, tangy, and crunchy—great for picnics, BBQs, or potlucks!


INGREDIENTS

  • 2 cups elbow macaroni, cooked, rinsed with cold water, and drained

  • 1 cup mayonnaise (or Greek yogurt for a lighter option)

  • 2 tbsp vinegar (white or apple cider)

  • 1 tbsp sugar

  • 1 tsp Dijon mustard (optional, adds tang)

  • ½ tsp salt

  • ¼ tsp black pepper

  • 1 cup diced cheddar cheese

  • ½ cup peas (thawed if frozen)

  • ½ cup diced red bell pepper

  • ½ cup diced celery

  • ¼ cup diced red onion (soak in cold water for 10 mins to mellow if preferred)

  • Fresh dill or parsley for garnish

Optional Add-Ins:

  • 2 hard-boiled eggs, chopped

  • ¼ cup sweet pickle relish

  • ½ tsp celery seed

  • ½ tsp paprika


INSTRUCTIONS

1. Cook & Cool Pasta

  • Boil macaroni in salted water until al dente. Drain, rinse with cold water, and let cool completely.

2. Make the Dressing

  • In a large bowl, whisk mayonnaise, vinegar, sugar, Dijon mustard, salt, and pepper until smooth.

3. Combine Everything

  • Add cooled macaroni, cheese, peas, bell pepper, celery, and red onion to the dressing.

  • Gently fold together until evenly coated.

4. Chill & Serve

  • Cover and refrigerate at least 1 hour (best after 2-4 hours for flavors to meld).

  • Garnish with fresh dill before serving.

✔ For extra creaminess, add 2 tbsp sour cream to the dressing.
✔ Make ahead! This salad tastes even better the next day.
✔ Too thick? Loosen with a splash of milk or pickle juice.
