Classic Coleslaw

Classic Coleslaw

Prep Time: 15 mins | Servings: 6-8

Ingredients:

  • ½ medium green cabbage, finely shredded (~4 cups)

  • 1 medium carrot, grated

  • ½ small red onion, thinly sliced (optional)

  • ¼ cup mayonnaise

  • 2 tbsp sour cream or Greek yogurt (optional, for creaminess)

  • 1 tbsp apple cider vinegar or lemon juice

  • 1 tbsp Dijon mustard (optional)

  • 1-2 tbsp sugar (or honey)

  • ½ tsp celery seeds (optional)

  • ½ tsp salt (adjust to taste)

  • ¼ tsp black pepper

Instructions:

  1. Prepare veggies: Shred the cabbage, grate the carrot, and thinly slice the red onion (if using).

  2. Make dressing: In a large bowl, whisk together mayo, sour cream (if using), vinegar, mustard, sugar, celery seeds, salt, and pepper.

  3. Combine: Add the cabbage, carrot, and onion to the dressing. Toss well until evenly coated.

  4. Chill: Refrigerate for at least 30 minutes before serving to let flavors meld.

Variations:

  • Creamier slaw: Add more mayo or yogurt.

  • Vinegar-based slaw: Skip mayo, use ¼ cup vinegar + 2 tbsp oil + sugar.

  • Add-ins: Apples, raisins, jalapeños, or bacon for extra flavor!
