Classic Chicken Stew

Here’s a hearty, comforting Chicken Stew recipe that’s packed with tender chicken, vegetables, and rich flavors—perfect for chilly days!


Classic Chicken Stew

(Serves 6 | Prep: 20 mins | Cook: 1 hour)

Ingredients

  • 2 lbs boneless, skinless chicken thighs (or breasts), cut into chunks

  • 2 tbsp olive oil

  • 1 onion, diced

  • 3 garlic cloves, minced

  • 3 carrots, sliced

  • 3 celery stalks, sliced

  • 4 potatoes, cubed

  • 4 cups chicken broth

  • 1 can (14 oz) diced tomatoes (with juice)

  • 1 tsp thyme

  • 1 tsp rosemary

  • 1 bay leaf

  • Salt & pepper to taste

  • 2 tbsp flour (or cornstarch for gluten-free)

  • 1 cup frozen peas (optional)

  • Fresh parsley, chopped (for garnish)


Instructions

1️⃣ Brown the Chicken:

  • Heat oil in a large pot/Dutch oven over medium-high heat. Season chicken with salt and pepper, then brown in batches (5 mins per side). Remove and set aside.

2️⃣ Sauté Veggies:

  • In the same pot, add onion, garlic, carrots, and celery. Cook 5 mins until softened.

3️⃣ Thicken the Stew:

  • Sprinkle flour over veggies, stir for 1 min. Gradually pour in broth while stirring to avoid lumps.

4️⃣ Simmer:

  • Add chicken back, along with potatoes, tomatoes, thyme, rosemary, and bay leaf.

  • Bring to a boil, then reduce heat to low. Cover and simmer 30-40 mins until chicken is tender and potatoes are soft.

5️⃣ Finish:

  • Stir in peas (if using) and cook 5 more mins. Discard bay leaf. Adjust seasoning.

6️⃣ Serve:

  • Garnish with fresh parsley. Great with crusty bread or over mashed potatoes!


💡 Tips & Variations

✅ Creamier stew? Stir in ½ cup heavy cream at the end.
✅ Slow cooker version: Brown chicken/veggies first, then cook on Low 6-8 hrs or High 3-4 hrs.
✅ Extra flavor: Add a splash of white wine when sautéing onions.
