Classic Chicken Stew
(Serves 6 | Prep: 20 mins | Cook: 1 hour)
Ingredients
-
2 lbs boneless, skinless chicken thighs (or breasts), cut into chunks
-
2 tbsp olive oil
-
1 onion, diced
-
3 garlic cloves, minced
-
3 carrots, sliced
-
3 celery stalks, sliced
-
4 potatoes, cubed
-
4 cups chicken broth
-
1 can (14 oz) diced tomatoes (with juice)
-
1 tsp thyme
-
1 tsp rosemary
-
1 bay leaf
-
Salt & pepper to taste
-
2 tbsp flour (or cornstarch for gluten-free)
-
1 cup frozen peas (optional)
-
Fresh parsley, chopped (for garnish)
Instructions
1️⃣ Brown the Chicken:
-
Heat oil in a large pot/Dutch oven over medium-high heat. Season chicken with salt and pepper, then brown in batches (5 mins per side). Remove and set aside.
2️⃣ Sauté Veggies:
-
In the same pot, add onion, garlic, carrots, and celery. Cook 5 mins until softened.
3️⃣ Thicken the Stew:
-
Sprinkle flour over veggies, stir for 1 min. Gradually pour in broth while stirring to avoid lumps.
4️⃣ Simmer:
-
Add chicken back, along with potatoes, tomatoes, thyme, rosemary, and bay leaf.
-
Bring to a boil, then reduce heat to low. Cover and simmer 30-40 mins until chicken is tender and potatoes are soft.
5️⃣ Finish:
-
Stir in peas (if using) and cook 5 more mins. Discard bay leaf. Adjust seasoning.
6️⃣ Serve:
-
Garnish with fresh parsley. Great with crusty bread or over mashed potatoes!
