Classic Baked Custard

Posted on July 29, 2025

Silky, creamy, and gently sweet—this old-fashioned dessert is simple, comforting, and endlessly adaptable.

Ingredients *(Serves 4-6)*

  • 2 cups whole milk (or half-and-half for extra richness)

  • 3 large eggs

  • ⅓ cup sugar (adjust to taste)

  • 1 tsp vanilla extract

  • ¼ tsp salt

  • Nutmeg or cinnamon (for dusting)

Instructions *(Prep: 10 mins | Bake: 40-50 mins)*

1️⃣ Preheat oven to 325°F (160°C). Lightly grease 4-6 ramekins or a 1-quart baking dish.
2️⃣ Warm milk in a saucepan until steaming (not boiling).
3️⃣ Whisk eggs, sugar, vanilla, and salt in a bowl until smooth.
4️⃣ Temper eggs: Slowly pour warm milk into egg mixture while whisking constantly.
5️⃣ Strain through a fine-mesh sieve for ultra-smooth custard.
6️⃣ Pour into ramekins, sprinkle with nutmeg, and place in a deep baking pan.
7️⃣ Bake in a water bath: Fill pan with hot water halfway up ramekins.
8️⃣ Bake 40-50 mins until set but slightly jiggly in the center.
9️⃣ Cool at room temp, then chill for 2+ hours before serving.

💡 Pro Tips

✅ Prevent bubbles: Skim foam off custard before baking.
✅ Test doneness: Insert a knife near the edge—it should come out clean.
✅ Flavor twists:

  • Cardamom: Add ¼ tsp to warm milk.

  • Citrus: Infuse milk with orange/lemon zest.

  • Maple: Replace sugar with ¼ cup maple syrup.

🍽️ Serving Ideas

  • Top with fresh berries or caramel sauce.

  • Pair with shortbread cookies for dipping.

“Like a hug in dessert form—warm, simple, and timeless.”
