Cinnamon Roll Bliss Bars 🍥

Imagine the gooey goodness of cinnamon rolls in easy-to-slice bar form—with layers of buttery dough, cinnamon-sugar filling, and creamy glaze!


Prep Time: 20 mins | Cook Time: 25-30 mins | Total Time: 1 hr (+ cooling)

Servings: 9×13-inch pan (12-16 bars)


Ingredients

For the Dough:

  • 3 cups (375g) all-purpose flour
  • ¼ cup (50g) granulated sugar
  • 1 tbsp baking powder
  • ½ tsp salt
  • ½ cup (115g) cold unsalted butter, cubed
  • 1 cup (240ml) whole milk (or buttermilk for tang)
  • 1 tsp vanilla extract

For the Cinnamon Filling:

  • ½ cup (115g) softened butter
  • 1 cup (200g) brown sugar, packed
  • 2 tbsp ground cinnamon
  • 1 tsp vanilla extract

For the Cream Cheese Glaze:

  • 4 oz (115g) cream cheese, softened
  • 1 cup (120g) powdered sugar
  • 2 tbsp milk or heavy cream
  • ½ tsp vanilla extract

(Optional: ½ cup chopped pecans or walnuts for crunch!)


Instructions

1. Make the Dough:

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan.
  2. In a large bowl, whisk flour, sugar, baking powder, and salt.
  3. Cut in cold butter (with a pastry cutter or fingers) until crumbly.
  4. Stir in milk and vanilla until a soft dough forms. Press 2/3 of the dough into the pan.

2. Add the Cinnamon Filling:

  1. Mix softened butter, brown sugar, cinnamon, and vanilla into a paste.
  2. Spread evenly over the dough in the pan.
  3. Crumble the remaining dough on top (like a streusel).

3. Bake & Glaze:

  1. Bake for 25-30 mins until golden. Cool 15 mins.
  2. Whisk cream cheese, powdered sugar, milk, and vanilla until smooth. Drizzle over warm bars.

Tips for Success

✔ Keep butter cold for a flaky dough texture.
✔ Don’t overbake—bars should be soft and slightly gooey.
✔ Warm before serving for melty cinnamon bliss!
