Ingredients

- 3 cups (375g) all-purpose flour
- ¼ cup (50g) granulated sugar
- 1 tbsp baking powder
- ½ tsp salt
- ½ cup (115g) cold unsalted butter, cubed
- 1 cup (240ml) whole milk (or buttermilk for tang)
- 1 tsp vanilla extract
For the Cinnamon Filling:
- ½ cup (115g) softened butter
- 1 cup (200g) brown sugar, packed
- 2 tbsp ground cinnamon
- 1 tsp vanilla extract
For the Cream Cheese Glaze:
- 4 oz (115g) cream cheese, softened
- 1 cup (120g) powdered sugar
- 2 tbsp milk or heavy cream
- ½ tsp vanilla extract
(Optional: ½ cup chopped pecans or walnuts for crunch!)
Instructions
1. Make the Dough:
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan.
- In a large bowl, whisk flour, sugar, baking powder, and salt.
- Cut in cold butter (with a pastry cutter or fingers) until crumbly.
- Stir in milk and vanilla until a soft dough forms. Press 2/3 of the dough into the pan.
2. Add the Cinnamon Filling:
- Mix softened butter, brown sugar, cinnamon, and vanilla into a paste.
- Spread evenly over the dough in the pan.
- Crumble the remaining dough on top (like a streusel).
3. Bake & Glaze:
- Bake for 25-30 mins until golden. Cool 15 mins.
- Whisk cream cheese, powdered sugar, milk, and vanilla until smooth. Drizzle over warm bars.
