Chipotle Ranch Grilled Chicken Burrito 🌯

Smoky grilled chicken, creamy chipotle ranch, and fresh fillings wrapped in a warm tortilla.

Ingredients

For the Chicken Marinade:

  • 1 lb (450g) chicken breast or thighs, thinly sliced

  • 2 tbsp olive oil

  • 3 garlic cloves, minced

  • 2 tbsp lime juice

  • 1 tsp chipotle chili powder (or 1 tbsp chipotle in adobo sauce, minced)

  • 1 tsp smoked paprika

  • 1 tsp cumin

  • 1 tsp salt

  • ½ tsp black pepper

For the Chipotle Ranch Sauce:

  • ½ cup ranch dressing (store-bought or homemade)

  • 1–2 tbsp chipotle in adobo sauce (adjust for spice)

  • 1 tbsp lime juice

  • 1 tsp honey (optional, for balance)

For the Burrito Fillings:

  • 4 large flour tortillas (burrito-sized)

  • 1 cup cooked cilantro-lime rice (or plain rice)

  • 1 cup black beans, drained & warmed

  • 1 cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)

  • 1 cup chopped lettuce (romaine or iceberg)

  • ½ cup diced tomatoes

  • ½ cup diced red onion or pickled jalapeños (optional)

  • ½ cup sour cream or Greek yogurt (optional)

  • Fresh cilantro, chopped


Instructions

1. Marinate & Grill the Chicken

  1. In a bowl, mix olive oil, garlic, lime juice, chipotle powder, paprika, cumin, salt, and pepper.

  2. Coat chicken in marinade and let sit 30 mins (or up to 4 hrs).

  3. Grill or pan-sear chicken over medium-high heat for 5–7 mins per side until cooked. Slice into strips.

2. Make the Chipotle Ranch Sauce

  • Mix ranch dressing, chipotle in adobo, lime juice, and honey until smooth.

3. Assemble the Burritos

  1. Warm tortillas (microwave 10 sec or dry pan).

  2. Layer in order:

    • Rice (base to hold fillings)

    • Black beans

    • Cheese (melts slightly from warm ingredients)

    • Grilled chicken

    • Lettuce, tomatoes, onions

    • Chipotle ranch sauce (drizzle generously)

    • Sour cream & cilantro (optional)

  3. Fold burrito-style: Fold sides in, then roll tightly from the bottom.

4. Optional Crispy Finish

  • Heat a pan over medium, lightly toast the burrito seam-side down for 1–2 mins to seal and crisp.


Tips

🔥 Spice control: Use less chipotle for mild, more for heat.
🧀 Melty cheese: Add while ingredients are warm for gooey goodness.
🍚 Meal prep: Make chicken & sauce ahead for quick assembly.
