Chicken Alfredo Lasagna Roll-Ups

8 uncooked lasagna noodles

1 cup (100g) freshly grated Parmesan cheese

1 cup (250g) whole milk ricotta cheese

3 cups (340g) shredded mozzarella, divided (2 cups inside, 1 cup on top)

2 cups (280g) cooked shredded chicken (rotisserie works great!)

½ tsp Italian seasoning

1 (15 oz) jar Alfredo sauce, divided (¾ cup inside, rest for topping)

Salt & pepper, to taste

2 tbsp chopped parsley (optional garnish)
Instructions
1. Prep Noodles & Filling

Cook noodles al dente (1-2 mins less than package instructions). Drain, rinse with cold water, and lay flat on parchment paper.

Mix filling: In a bowl, combine ricotta, 1 cup mozzarella, Parmesan, chicken, Italian seasoning, ¾ cup Alfredo sauce, salt, and pepper.
2. Assemble Roll-Ups

Spread filling: Divide mixture evenly over noodles (about ¼ cup per noodle), leaving a 1-inch border at one end.

Roll up tightly from the filled end. Place seam-side down in a greased 9×13-inch baking dish.
3. Bake

Top with sauce: Pour remaining Alfredo sauce over roll-ups. Sprinkle with 1 cup mozzarella.

Bake at 375°F (190°C) for 20-25 mins, until bubbly and golden.

Broil 1-2 mins for extra crispiness (optional).
4. Serve

Garnish with parsley and extra Parmesan. Serve with garlic bread or a crisp salad!
