Ingredients
For the Cake:

1½ cups (190g) all-purpose flour

1 tsp baking powder

¼ tsp salt

½ cup (115g) unsalted butter, softened

¾ cup (150g) granulated sugar

2 large eggs, room temperature

1 tsp vanilla extract
-
½ cup (120ml) milk
-
1½ cups (225g) fresh or frozen cherries, pitted & halved
For the Surprise Topping:

¼ cup (50g) brown sugar

¼ cup (30g) flour
-
2 tbsp (30g) cold butter, cubed

½ tsp cinnamon
-
¼ cup (25g) sliced almonds (optional)
Instructions
1. Prep & Preheat

Preheat oven to 350°F (175°C). Grease a 9-inch round pan.

Toss cherries with 1 tbsp flour (to prevent sinking).
2. Make the Cake Batter

Whisk flour, baking powder, and salt in a bowl.

In another bowl, cream butter + sugar until fluffy. Add eggs one at a time, then vanilla.

Alternate adding dry ingredients and milk, mixing until just combined.

Gently fold in cherries.
3. Add the Surprise Topping

In a small bowl, rub brown sugar, flour, cinnamon, and cold butter with fingers until crumbly. Mix in almonds.

Pour batter into pan. Sprinkle topping evenly.
4. Bake & Serve

Bake 40-45 minutes until a toothpick comes out clean.
