Cheesy Ground Beef and Potato Casserole

A hearty, comforting one-dish meal with layers of savory beef, tender potatoes, and melted cheese—perfect for busy weeknights!


🥔 Ingredients

For the Casserole:

  • 1 lb (450g) ground beef (or ground turkey)

  • 4 medium potatoes, thinly sliced (~1/8 inch thick)

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 1 cup shredded cheddar cheese

  • 1 cup shredded mozzarella cheese

  • 1 can (10.5 oz) condensed cream of mushroom soup (or homemade substitute*)

  • ½ cup milk

  • 1 tsp Worcestershire sauce

  • 1 tsp paprika

  • 1 tsp dried thyme

  • Salt & pepper to taste

  • 2 Tbsp olive oil

(*Homemade substitute: Mix ¼ cup Greek yogurt + 2 Tbsp flour + ½ cup milk + ½ tsp mushroom powder.)*

For Topping (Optional):

  • ¼ cup breadcrumbs

  • 2 Tbsp melted butter

  • Fresh parsley, chopped


📝 Instructions

1. Prep the Potatoes:

  • Thinly slice potatoes (a mandoline works great for even slices). Soak in cold water for 10 mins to remove starch, then drain and pat dry.

2. Cook the Beef:

  1. Heat 1 Tbsp oil in a skillet over medium heat. Sauté onion and garlic until soft (~3 mins).

  2. Add ground beef, breaking it up with a spoon. Cook until browned. Drain excess fat.

  3. Stir in paprika, thyme, Worcestershire sauce, salt, and pepper.

3. Make the Sauce:

  • In a bowl, whisk condensed soup, milk, and a pinch of black pepper until smooth.

4. Assemble the Casserole:

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.

  2. Layer 1: Spread half the potato slices in the dish. Season lightly with salt and pepper.

  3. Layer 2: Spread all the cooked beef mixture over the potatoes.

  4. Layer 3: Top with remaining potato slices.

  5. Layer 4: Pour the soup sauce evenly over everything.

  6. Layer 5: Sprinkle cheddar and mozzarella cheese on top.

  7. Optional topping: Mix breadcrumbs with melted butter and sprinkle over cheese.

5. Bake:

  • Cover with foil and bake for 40 mins.

  • Uncover and bake 15–20 mins more until potatoes are tender, cheese is bubbly, and top is golden.

  • Let rest 10 mins before serving. Garnish with parsley.

✅ Crisper top? Broil for 2–3 mins at the end (watch closely!).
✅ Add veggies: Layer in 1 cup spinach, mushrooms, or bell peppers with the beef.
✅ Make ahead: Assemble (unbaked) and refrigerate for up to 24 hours (add 10 mins to bake time).
