Cheese Bread (Pão de Queijo) Without Oven – Ready in 25 Minutes!

This Brazilian-inspired cheese bread (Pão de Queijo) is crispy on the outside, chewy on the inside, and packed with cheesy goodness—no oven needed! Made in a pan or air fryer for a quick, delicious snack.


Ingredients

  • 2 cups (240g) tapioca flour (or cornstarch, but tapioca is traditional)

  • 1 cup (100g) grated cheese (mozzarella, cheddar, or Parmesan work great)

  • 1/4 cup (60ml) milk (or dairy-free milk)

  • 2 tbsp (30g) melted butter (or oil)

  • 1 egg

  • 1 tsp (5g) baking powder

  • Pinch of salt (adjust to taste)

*(Optional: 1 minced garlic clove or 1/2 tsp garlic powder for extra flavor!)*


Instructions (Stovetop or Air Fryer Method)

1. Prepare the Dough

  1. In a bowl, whisk the egg, milk, melted butter, and salt.

  2. Add tapioca flour and baking powder, mixing well until crumbly.

  3. Fold in the grated cheese until a soft, slightly sticky dough forms.

  4. (Optional) Let the dough rest for 5-10 mins (helps texture).

2. Shape the Cheese Bread

  • With lightly oiled hands, roll dough into small balls (golf ball size).

  • Flatten slightly if cooking on a pan.

3. Cook (Choose Your Method!)

🔥 Stovetop (Non-Stick Pan) Method:

  1. Heat a non-stick pan over medium-low heat.

  2. Lightly grease with butter/oil.

  3. Place dough balls in the pan, leaving space between them.

  4. Cover and cook 4-5 mins per side until golden and puffed.

🍳 Air Fryer Method:

  1. Preheat air fryer to 350°F (175°C).

  2. Place dough balls in the basket (lightly greased).

  3. Cook 8-10 mins, shaking halfway, until golden.

4. Serve Hot!

  • Best eaten fresh and warm—the cheese will be stretchy inside!

  • Great with dips (garlic butter, marinara, or sour cream).


Tips for Success

✔ Tapioca flour is key for the right chewy texture (cornstarch works but is denser).
✔ Don’t overmix—just combine until the dough holds together.
✔ No sticking? If dough is too wet, add 1-2 tbsp more flour.
✔ Storage: Reheat in a pan or air fryer for 2-3 mins to regain crispiness.
