Canadian Flapper Pie

A nostalgic prairie dessert with a silky vanilla custard filling, graham cracker crust, and a fluffy meringue topping. A classic Canadian treat!


Ingredients

For the Graham Cracker Crust:

  • 1 ½ cups (150g) graham cracker crumbs

  • ⅓ cup (75g) melted butter

  • 2 tbsp (25g) sugar

For the Custard Filling:

  • 3 cups (720ml) milk

  • ¾ cup (150g) sugar

  • ¼ cup (30g) cornstarch

  • 3 egg yolks (save whites for meringue)

  • 1 tsp vanilla extract

  • Pinch of salt

For the Meringue Topping:

  • 3 egg whites

  • ¼ tsp cream of tartar (optional, stabilizes meringue)

  • 6 tbsp (75g) sugar

(Optional: A sprinkle of cinnamon or nutmeg on top!)


Instructions

1. Make the Crust

  1. Mix graham crumbs, melted butter, and sugar.

  2. Press firmly into a 9-inch pie dish.

  3. Bake at 350°F (175°C) for 8-10 mins, then cool.

2. Prepare the Custard

  1. In a saucepan, whisk sugar, cornstarch, and salt.

  2. Gradually whisk in milk until smooth.

  3. Cook over medium heat, stirring constantly, until thickened (~8 mins).

  4. Temper egg yolks by slowly adding hot custard, then return to pan.

  5. Cook 2 more mins, then stir in vanilla.

  6. Pour into crust and chill 1 hour (or until set).

3. Whip the Meringue

  1. Beat egg whites + cream of tartar until foamy.

  2. Gradually add sugar, beating until stiff peaks form.

  3. Spread over custard, sealing edges.

  4. Bake at 350°F (175°C) for 12-15 mins until golden.

4. Cool & Serve

  • Let cool to room temp, then refrigerate 4+ hours.

  • Slice and enjoy chilled!


Tips

🍂 No meringue? Use whipped cream instead.
🔥 Pre-bake crust to prevent sogginess.
🥛 Rich custard: Substitute 1 cup milk with cream.
