Posted on June 30, 2025

A fiery twist on classic scampi—garlicky, buttery shrimp with Cajun spice, lemon, and a splash of white wine. Ready in 15 minutes!

📝 Ingredients (Serves 4)

For the Shrimp

  • 1 lb (450g) large shrimp, peeled & deveined (tails on for presentation)

  • 2 tbsp Cajun seasoning (or make your own: 1 tsp paprika + ½ tsp each garlic powder, onion powder, oregano, thyme, cayenne)

  • 3 tbsp butter

  • 2 tbsp olive oil

For the Sauce

  • 4 garlic cloves, minced

  • ½ cup dry white wine (or sub chicken broth)

  • 2 tbsp lemon juice (+ zest for garnish)

  • ¼ tsp red pepper flakes (optional, for extra heat)

  • Salt & black pepper to taste

To Finish

  • ¼ cup chopped parsley

  • Lemon wedges

  • Cooked pasta (linguine or crusty bread for dipping)

👨‍🍳 Instructions

1. Season & Sear Shrimp

  1. Toss shrimp with Cajun seasoning.

  2. Heat butter + olive oil in a large skillet over medium-high.

  3. Sear shrimp 1-2 mins per side until pink. Remove and set aside.

2. Make the Sauce

  1. In the same pan, sauté garlic for 30 secs (don’t burn!).

  2. Deglaze with white wine, simmer 2 mins to reduce by half.

  3. Stir in lemon juice, red pepper flakes, salt, and pepper.

3. Combine & Serve

  1. Return shrimp to the pan, toss to coat.

  2. Sprinkle with parsley and lemon zest.

  3. Serve over pasta or with crusty bread to soak up the sauce.

💡 Pro Tips

✔ Cajun seasoning hack: Add ½ tsp smoked paprika for depth.
✔ Creamy version: Stir in 2 tbsp heavy cream at the end.
✔ No alcohol? Use chicken broth + 1 tsp apple cider vinegar.

🌶️ Spice Level Guide

  • Mild: Skip cayenne/red pepper flakes.

  • Extra heat: Add 1 diced jalapeño with the garlic.

Bold, zesty, and packed with flavor!
