3/4 cup (90g) powdered sugar (or confectioners’ sugar)

1 large egg, room temperature

1 ½ tsp pure vanilla extract (or 1 tsp vanilla + ½ tsp almond extract)

2 ¼ cups (280g) all-purpose flour, sifted

1/2 tsp salt (omit if using salted butter)

1. Cream the butter and sugar

In a large bowl, beat butter and powdered sugar together using a hand mixer or stand mixer until pale and fluffy (about 2–3 minutes).

2. Add egg and vanilla

Beat in the egg and vanilla extract until fully combined and smooth.

3. Mix dry ingredients

In a separate bowl, whisk together the flour and salt. Gradually add this to the butter mixture, mixing just until combined. Do not overmix.

4. Chill the dough

Form the dough into a disk or log, wrap in plastic wrap, and chill for at least 30 minutes (or up to 24 hours). This step prevents spreading and makes the dough easier to handle.

5. Preheat the oven

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

6. Shape the cookies

For classic round cookies: Slice chilled dough into ¼-inch rounds.

For piped cookies: Let dough soften slightly, then pipe shapes using a star tip.

For rolled and cut-out cookies: Roll to ¼-inch thickness and cut with cookie cutters.

7. Bake

Bake for 10–12 minutes or until edges are just starting to turn golden. Centers should remain pale.

8. Cool

Let cookies cool on the tray for 5 minutes, then transfer to a wire rack to cool completely.

❓ Can I use granulated sugar instead of powdered sugar?

Technically, yes, but powdered sugar gives a smoother texture and more tender crumb. Granulated sugar will result in a slightly crispier cookie.
