Blueberry Cottage Cheese Breakfast Bake
Ingredients:

1 cup cottage cheese

1/2 cup rolled oats

1/2 cup fresh blueberries

2 large eggs

1/4 cup honey or maple syrup

1/2 teaspoon cinnamon

1/4 teaspoon vanilla extract
Instructions:

Preheat the oven to 350°F (175°C). Lightly grease a small baking dish (about 6×6 inch or similar size) or use individual ramekins.

Mix the wet ingredients:
In a mixing bowl, whisk together the eggs, cottage cheese, honey or maple syrup, and vanilla extract until smooth. -
Add the dry ingredients:
Stir in the oats and cinnamon until well combined. -
Fold in the blueberries gently so they stay mostly whole.

Pour the mixture into the prepared baking dish and spread evenly.

Bake for 30–35 minutes, or until the top is golden and the center is set.

Cool slightly before serving. Enjoy warm as-is or with a dollop of yogurt or a drizzle of nut butter.
Tips:

For a firmer texture, bake a little longer.

You can prep it the night before and bake it in the morning.

Frozen blueberries can be used—just toss them in a little flour to avoid too much color bleeding.
