Here’s a Blackstone Cheeseburger Quesadilla recipe — perfect for your griddle! It’s everything you love about a juicy cheeseburger, stuffed into a crispy, cheesy quesadilla. Ideal for camping, tailgating, or easy weeknight dinners.

For the Cheeseburger Filling:

  • 1 lb ground beef (80/20 for flavor)
  • Salt and pepper, to taste
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tbsp ketchup
  • 1 tbsp yellow mustard
  • ½ small onion, finely diced (optional)
  • Pickles, chopped or sliced (optional but classic)

For the Quesadillas:

  • 4 large flour tortillas (burrito size)
  • 1½–2 cups shredded cheddar or American cheese (or blend)
  • Butter or oil for grilling
  • Burger sauce (see below) or condiments of choice

Mix:

  • ¼ cup mayo
  • 1 tbsp ketchup
  • 1 tsp mustard
  • 1 tsp relish or chopped pickles
  • ½ tsp garlic powder
  • ½ tsp paprika

👨‍🍳 Instructions

1. Preheat the Blackstone

  • Heat your Blackstone griddle to medium heat (about 375°F–400°F).

2. Cook the Beef

  1. Add a little oil to the griddle.
  2. Add ground beef and diced onions.
  3. Season with salt, pepper, garlic powder, and onion powder.
  4. Cook until fully browned, then stir in ketchup and mustard.
  5. Mix well and cook for another minute. Move to the cool side of the griddle.

3. Assemble the Quesadillas

For each quesadilla:

  1. Lay a tortilla on the griddle (or a cutting board).
  2. Sprinkle cheese on one half of the tortilla.
  3. Add a layer of cooked beef mixture.
  4. Add pickles, more cheese, and a drizzle of burger sauce if using.
  5. Fold the tortilla over to form a half-moon shape.

4. Grill the Quesadillas

  1. Lightly butter the outside of the tortilla or the griddle surface.
  2. Grill each quesadilla for 2–3 minutes per side, pressing gently with a spatula, until golden brown and crispy with melty cheese.

5. Serve

  • Let rest for 1–2 minutes.
  • Slice into wedges.
  • Serve with extra burger sauce, ketchup, mustard, or dipping sauce.
