Belizean Coconut Rum Sweet Potato Pound Cake 🍠🥥🍹

A moist, fragrant pound cake infused with tropical flavors—creamy coconut, spiced rum, and velvety sweet potato. Perfect for holiday gatherings or anytime you crave a taste of the islands!


🍰 Ingredients

Wet Ingredients:

  • 1 cup mashed sweet potatoes (cooked & cooled)

  • 1 cup granulated sugar

  • ½ cup unsalted butter, softened (or coconut oil for dairy-free)

  • ½ cup coconut milk (full-fat for richness)

  • ¼ cup dark rum (or 1 tsp rum extract + ¼ cup orange juice for non-alcoholic)

  • 3 large eggs, room temperature

Dry Ingredients:

  • 1½ cups all-purpose flour

  • 1 tsp baking powder

  • ½ tsp baking soda

  • ½ tsp salt

  • ½ tsp ground cinnamon (optional, for warmth)

  • ¼ tsp nutmeg (optional)

Optional Glaze:

  • ½ cup powdered sugar + 1 tbsp rum or coconut milk


📝 Instructions

1️⃣ Prep:

  • Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment.

  • Boil or roast 1 medium sweet potato (peeled), then mash until smooth. Measure 1 cup.

2️⃣ Mix Wet Ingredients:

  • In a bowl, cream butter + sugar until fluffy.

  • Beat in eggs, one at a time.

  • Add mashed sweet potato, coconut milk, and rum. Mix well.

3️⃣ Combine Dry Ingredients:

  • In another bowl, whisk flour, baking powder, baking soda, salt, and spices (if using).

4️⃣ Bake:

  • Gently fold dry ingredients into wet batter until just combined (don’t overmix).

  • Pour into pan and bake 50-60 mins, or until a toothpick comes out clean.

  • Cool in pan 10 mins, then transfer to a wire rack.

5️⃣ Glaze (Optional):

  • Whisk powdered sugar with rum or coconut milk until smooth. Drizzle over cooled cake.
