Apple Slab Pie 🍏🍂

A crowd-pleasing twist on classic apple pie! This easy, rectangular pie is packed with spiced apples and baked on a flaky crust—perfect for parties, potlucks, or holiday feasts.

Ingredients

For the Crust:

  • 3 cups (375g) all-purpose flour
  • 1 tbsp granulated sugar
  • 1 tsp salt
  • 1 cup (225g) cold unsalted butter, cubed
  • 6-8 tbsp ice water

For the Filling:

  • 6 cups (about 6 medium) peeled & thinly sliced apples (Granny Smith + Honeycrisp mix)
  • ½ cup (100g) granulated sugar
  • ¼ cup (55g) brown sugar, packed
  • 2 tbsp lemon juice
  • 2 tsp ground cinnamon
  • ½ tsp nutmeg
  • ¼ tsp allspice
  • 3 tbsp cornstarch (or flour, to thicken)

For the Topping:

  • 1 egg, beaten (for egg wash)
  • 1 tbsp coarse sugar (for sprinkling)
  • Optional: Drizzle with caramel sauce or vanilla glaze

Instructions

1. Make the Crust:

  1. In a food processor, pulse flour, sugar, and salt. Add cold butter until pea-sized crumbs form.
  2. Drizzle in ice water, 1 tbsp at a time, until dough comes together. Divide into 2 discs (one slightly larger). Chill 30 mins.

2. Prep the Filling:

  1. Toss apples, sugars, lemon juice, spices, and cornstarch in a bowl. Let sit 15 mins (to release juices).

3. Assemble the Pie:

  1. Preheat oven to 375°F (190°C). Roll the larger dough disc into a 10×15-inch rectangle. Fit into a jelly roll pan (10×15-inch).
  2. Add apple filling, spreading evenly. Roll out the second dough disc, place on top, and crimp edges.
  3. Cut slits in the top crust. Brush with egg wash and sprinkle with sugar.

4. Bake & Serve:

  1. Bake 35-40 mins until golden and bubbly. Cool 1 hour before slicing.

✔ Prevent soggy crust: Sprinkle bottom with breadcrumbs or crushed cornflakes before adding filling.
✔ Easy shortcut: Use 2 store-bought pie crusts (unroll and patch together).
