Apple Pecan Cake with Caramel Glaze

This moist, spiced apple cake is loaded with toasted pecans and topped with a luscious caramel glaze—perfect for fall gatherings or cozy desserts!


Ingredients

For the Cake:

  • 2 cups all-purpose flour

  • 1½ tsp baking powder

  • ½ tsp baking soda

  • 1 tsp ground cinnamon

  • ½ tsp nutmeg

  • ¼ tsp salt

  • ½ cup unsalted butter, softened

  • 1 cup brown sugar

  • ½ cup granulated sugar

  • 2 large eggs

  • 1 tsp vanilla extract

  • ½ cup buttermilk (or ½ cup milk + ½ tbsp vinegar)

  • 2 cups peeled & diced apples (Granny Smith or Honeycrisp)

  • 1 cup chopped pecans, toasted

For the Caramel Glaze:

  • ½ cup unsalted butter

  • 1 cup brown sugar

  • ¼ cup heavy cream

  • 1 tsp vanilla extract

  • Pinch of salt


Instructions

  1. Prep:

    • Preheat oven to 350°F (175°C). Grease a 9×13-inch pan or Bundt pan.

    • Whisk flour, baking powder, baking soda, cinnamon, nutmeg, and salt in a bowl.

  2. Make the Cake Batter:

    • Beat butter, brown sugar, and granulated sugar until fluffy.

    • Add eggs one at a time, then mix in vanilla.

    • Alternate adding dry ingredients and buttermilk, mixing until just combined.

    • Fold in apples and pecans.

  3. Bake:

    • Pour batter into prepared pan. Bake for 35-40 mins (or 45-50 mins for Bundt) until a toothpick comes out clean.

    • Cool for 15 mins before glazing.

  4. Make the Caramel Glaze:

    • Melt butter in a saucepan over medium heat.

    • Stir in brown sugar, cream, and salt. Simmer for 3-4 mins, stirring constantly.

    • Remove from heat; stir in vanilla.

    • Drizzle warm glaze over the cake.
