Apple Cinnamon Muffins

Moist, crumbly, and packed with cozy autumn flavors—perfect for breakfast or a sweet snack!


🧁 Ingredients (Makes 12 muffins)

For the Muffins:

  • 1 ½ cups (190g) all-purpose flour

  • 1 ½ tsp baking powder

  • ½ tsp baking soda

  • 1 tsp ground cinnamon

  • ½ tsp nutmeg (optional)

  • ¼ tsp salt

  • ½ cup (115g) unsalted butter, melted and cooled

  • ½ cup (100g) granulated sugar

  • ¼ cup (50g) brown sugar

  • 2 large eggs, room temperature

  • 1 tsp vanilla extract

  • ½ cup (120ml) buttermilk (or milk + ½ tbsp lemon juice)

  • 1 ½ cups (180g) diced apples (peeled, like Granny Smith or Honeycrisp)

For the Cinnamon Streusel Topping (Optional):

  • ¼ cup (50g) brown sugar

  • 2 tbsp flour

  • 1 tsp cinnamon

  • 2 tbsp cold butter, cubed


📝 Instructions *(Prep: 15 mins | Bake: 18-20 mins)*

1️⃣ Prep: Preheat oven to 375°F (190°C). Line a muffin tin with liners or grease well.

2️⃣ Dry Mix: Whisk flour, baking powder, baking soda, cinnamon, nutmeg, and salt in a bowl.

3️⃣ Wet Mix: In another bowl, whisk melted butter, sugars, eggs, vanilla, and buttermilk until smooth.

4️⃣ Combine: Gently fold wet ingredients into dry until just mixed (batter will be thick). Fold in diced apples.

5️⃣ Streusel (Optional): Mix brown sugar, flour, and cinnamon. Cut in cold butter until crumbly.

6️⃣ Bake: Divide batter into muffin cups (fill ¾ full). Sprinkle with streusel. Bake 18-20 mins until a toothpick comes out clean.

7️⃣ Cool: Let sit 5 mins in the pan, then transfer to a rack.
