Crockpot Ranch Chicken and Potatoes

Ingredients

  • 4 boneless, skinless chicken breasts (or thighs)

  • 1–1.5 lbs baby potatoes, halved

  • 1 packet ranch seasoning mix (or ~3 tbsp homemade ranch seasoning)

  • 1 can (10.5 oz) cream of chicken soup
    OR 1 cup heavy cream or broth if you prefer lighter

  • ½ cup sour cream (optional, stirred in at the end for extra creaminess)

  • ½ cup shredded cheddar cheese (optional)

  • 2 tbsp butter, sliced

  • Salt & pepper to taste

  • Fresh parsley or chives for garnish (optional)


🥣 Instructions

  1. Prep the crockpot: Lightly spray with nonstick spray.

  2. Add potatoes: Put baby potatoes at the bottom of the crockpot.

  3. Place chicken on top of the potatoes.

  4. Sprinkle ranch seasoning evenly over chicken and potatoes.

  5. Add soup & butter:

    • Spread the cream of chicken soup over the chicken.

    • Top with butter slices.

  6. Cook:

    • Low: 6–7 hours

    • High: 3–4 hours
      Chicken should be tender and potatoes soft.

  7. Optional finishing:

    • Stir in sour cream for creaminess.

    • Add cheddar cheese on top and let melt for 5–10 minutes.

  8. Serve: Break chicken into chunks or serve whole. Spoon sauce over the top.
