The World’s Easiest “Dump & Stir” Muffins

One bowl, no fuss, endlessly customizable — the perfect no-fail recipe for when you need warm, homemade muffins FAST!


🥣 Base Recipe: Perfect Every Time

(Makes 12 standard muffins)

Ingredients:

  • 2 cups (250g) all-purpose flour

  • ½ cup (100g) sugar (white, brown, or coconut)

  • 1 tbsp baking powder

  • ½ tsp salt

  • 1 cup (240ml) milk (any kind)

  • ⅓ cup (80ml) vegetable oil or melted butter

  • 1 large egg

  • 1 tsp vanilla extract


🚀 Instructions

  1. Preheat oven to 375°F (190°C). Line a muffin tin with papers or grease well.

  2. Mix Dry: In a large bowl, whisk flour, sugar, baking powder, and salt.

  3. Add Wet: Pour in milk, oil, egg, and vanilla.

  4. Combine: Stir with a spatula just until mixed (batter will be lumpy—do not overmix!).

  5. Bake: Divide batter into muffin cups. Bake 18–22 minutes until tops spring back when touched.

  6. Cool 5 minutes in pan, then transfer to a rack.

  • Blueberry Lemon: 1 cup fresh/frozen blueberries + zest of 1 lemon

  • Chocolate Chip: ¾ cup chocolate chips + pinch of cinnamon

  • Apple Cinnamon: 1 cup finely chopped apple + 1 tsp cinnamon

  • Banana Nut: 1 mashed ripe banana + ½ cup chopped walnuts

  • Funfetti: ½ cup rainbow sprinkles (fold in at the end)

✅ Fill cups ¾ full for perfect domed tops
✅ No muffin liners? Grease the tin well or use squares of parchment paper

  • Freeze: Up to 3 months—thaw and warm before serving
