No-Bake Coconut Cream Pie

A luscious, tropical dessert with a toasty coconut crust, velvety coconut custard, and billowy whipped cream topping—no oven needed!

Ingredients

For the Crust:

  • 1½ cups (150g) graham cracker crumbs (or gluten-free alternative)
  • 1 cup (90g) toasted shredded coconut (unsweetened or sweetened)
  • ¼ cup (50g) granulated sugar
  • 6 tbsp (85g) melted butter
  • Pinch of salt

For the Coconut Filling:

  • 1 (13.5 oz) can full-fat coconut milk (chilled overnight*)
  • 1 (3.4 oz) box instant coconut cream pudding mix (or vanilla + 1 tsp coconut extract)
  • 1 cup (240ml) cold whole milk (or coconut milk beverage)
  • 1 cup (240ml) heavy cream, whipped to stiff peaks

For the Topping:

  • 1 cup (240ml) heavy cream, whipped + sweetened with 2 tbsp powdered sugar
  • ½ cup (45g) toasted coconut flakes
  • Lime zest or toasted coconut chips (for garnish)

Instructions

1. Make the Crust:

  1. Mix graham crumbs, toasted coconut, sugar, melted butter, and salt.
  2. Press firmly into a 9-inch pie dish. Chill 15 mins.

2. Prepare the Filling:

  1. Scoop out the thick coconut cream from the chilled can (reserve liquid for smoothies).
  2. In a bowl, whisk pudding mix + milk until thickened (~2 mins). Fold in coconut cream.
  3. Gently fold in whipped cream until smooth. Pour into crust.

3. Chill & Garnish:

  1. Refrigerate at least 4 hours (or overnight).
  2. Before serving, top with sweetened whipped cream and toasted coconut.

Pro Tips

✔ Toast coconut for the crust in a dry skillet over medium heat until golden (~5 mins).
✔ No pudding mix? Use cornstarch custard: Simmer 2 cups milk + ½ cup sugar + ¼ cup cornstarch + 2 egg yolks + 1 tsp coconut extract until thick.
✔ Dairy-free? Use coconut whipped cream and vegan butter.


Serving Ideas
