Cinnamon Sugar French Toast Muffins

Here’s a warm and cozy recipe for Cinnamon Sugar French Toast Muffins — crispy on the outside, soft and custardy inside, and rolled in buttery cinnamon sugar. Perfect for breakfast, brunch, or a sweet snack!


🧁 Cinnamon Sugar French Toast Muffins

🍞 Ingredients:

For the Muffins:

  • 6 cups cubed day-old bread (French bread or brioche preferred)

  • 4 large eggs

  • 1¼ cups milk (whole or 2%)

  • ⅓ cup heavy cream (or more milk)

  • ¼ cup granulated sugar

  • 1½ tsp ground cinnamon

  • 1 tsp vanilla extract

  • Pinch of salt

For the Cinnamon Sugar Coating:

  • ½ cup unsalted butter, melted

  • ½ cup granulated sugar

  • 2 tsp ground cinnamon


👩‍🍳 Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 12-cup muffin tin generously or line with paper liners.

  2. Prep the bread:

    • Cut the bread into small cubes (about ½ to 1 inch).

    • Let it sit out for a few hours or lightly toast in the oven to dry it out if it’s too soft.

  3. Make the custard:

    • In a large bowl, whisk together eggs, milk, cream, sugar, cinnamon, vanilla, and salt.

  4. Soak the bread:

    • Add bread cubes to the bowl and gently toss to coat all the pieces.

    • Let it sit for 5–10 minutes so the bread absorbs the custard.

  5. Fill muffin tin:

    • Spoon the soaked bread cubes evenly into the muffin cups. Press down lightly to compact them a bit.

  6. Bake for 25–30 minutes, or until golden brown and set.

  7. Cool slightly for 5 minutes, then remove from the muffin tin.

  8. Make the cinnamon sugar coating:

    • Mix the cinnamon and sugar in a small bowl.

    • Dip each warm muffin top (or whole muffin) in melted butter, then roll in the cinnamon sugar mixture.


📝 Tips:

  • Best served warm!

  • Add-ins like mini chocolate chips or chopped apples can be mixed in for a twist.

  • Can be made ahead and reheated in the oven or air fryer.
