English muffin breakfast pizza

Here’s a delicious and easy recipe for English Muffin Breakfast Pizzas — perfect for busy mornings or a cozy brunch!


🍳 English Muffin Breakfast Pizza Recipe

🧁 Servings: 4 mini pizzas (2 English muffins)


📝 Ingredients:

  • 2 English muffins, split in half (4 halves total)
  • 4 large eggs
  • ¼ cup milk
  • ½ cup shredded cheddar cheese (or mozzarella, your choice)
  • 4 slices cooked bacon, chopped (or ½ cup cooked breakfast sausage or diced ham)
  • Salt and pepper, to taste
  • 1 tbsp butter
  • Optional toppings: chopped green onions, diced tomatoes, hot sauce, or avocado

🍳 Instructions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
  2. Toast the English muffins: Lightly toast the English muffin halves in a toaster or toaster oven to keep them from getting soggy.
  3. Make the scrambled eggs:
    • In a bowl, whisk together the eggs, milk, salt, and pepper.
    • Heat butter in a nonstick skillet over medium heat.
    • Pour in egg mixture and gently scramble until just cooked through (don’t overcook — they’ll finish in the oven).
  4. Assemble the pizzas:
    • Place toasted muffin halves on the baking sheet.
    • Divide scrambled eggs evenly among the 4 halves.
    • Top with bacon (or sausage/ham).
    • Sprinkle shredded cheese generously over each.
  5. Bake:
    • Bake in the preheated oven for 5–7 minutes, or until cheese is melted and bubbly.
    • Optional: broil for 1 minute at the end for extra golden cheese.
  6. Garnish & serve:
    • Add green onions, diced tomatoes, or hot sauce if desired.
    • Serve warm and enjoy!
