Cheesy Taco Potatoes
Crispy roasted potatoes loaded with seasoned beef, melted cheese, and all your favorite taco toppings!

1.5 lbs baby potatoes, halved

2 tbsp olive oil

1 tsp garlic powder

1 tsp smoked paprika

Salt & pepper to taste

1 lb ground beef (or turkey/chicken)

1 packet taco seasoning (or 2 tbsp homemade blend)

⅓ cup water
-
1 tbsp tomato paste
-
1 cup shredded cheddar cheese

Toppings (optional):

Sour cream

Diced avocado
-
Sliced jalapeños

Chopped cilantro

Salsa

👩🍳 Instructions (30 mins total)
1️⃣ Roast Potatoes

Preheat oven to 425°F (220°C).

Toss halved potatoes with olive oil, garlic powder, paprika, salt, and pepper.

Spread on a baking sheet, cut-side down. Roast 20-25 mins until crispy.
2️⃣ Cook Taco Beef

While potatoes roast, brown beef in a skillet over medium heat. Drain fat.

Stir in taco seasoning, water, and tomato paste. Simmer 5 mins until thickened.
3️⃣ Assemble & Melt

Remove potatoes from oven. Flip them cut-side up.

Spoon taco beef over potatoes, then sprinkle with cheese.

Return to oven for 3-5 mins until cheese melts.
4️⃣ Top & Serve

Garnish with your favorite toppings (sour cream, avocado, etc.).
