Classic Coleslaw

Ingredients:

½ medium green cabbage, finely shredded (~4 cups)

1 medium carrot, grated

½ small red onion, thinly sliced (optional)

¼ cup mayonnaise

2 tbsp sour cream or Greek yogurt (optional, for creaminess)

1 tbsp apple cider vinegar or lemon juice

1 tbsp Dijon mustard (optional)

1-2 tbsp sugar (or honey)

½ tsp celery seeds (optional)

Instructions:

Prepare veggies: Shred the cabbage, grate the carrot, and thinly slice the red onion (if using).

Make dressing: In a large bowl, whisk together mayo, sour cream (if using), vinegar, mustard, sugar, celery seeds, salt, and pepper.

Combine: Add the cabbage, carrot, and onion to the dressing. Toss well until evenly coated.
