Shrimp Fried Rice

A quick, flavorful, and satisfying dish that’s perfect for using leftover rice! Here’s a classic recipe with crispy shrimp, fluffy eggs, and savory seasonings.


Ingredients (Serves 2–3)

  • 2 cups cooked rice (preferably day-old, chilled)

  • ½ lb (225g) shrimp, peeled, deveined, and patted dry

  • 2 eggs, lightly beaten

  • 2 cloves garlic, minced

  • ½ cup diced carrots

  • ½ cup frozen peas (or mixed veggies)

  • 2 green onions, chopped

  • 2 tbsp soy sauce (or to taste)

  • 1 tbsp oyster sauce (optional, for umami)

  • ½ tsp sesame oil

  • 1 tsp sugar (optional, balances flavor)

  • Salt & pepper to taste

  • 2 tbsp vegetable oil (divided)


Instructions

  1. Prep Shrimp:

    • Season shrimp with a pinch of salt and pepper.

    • Heat 1 tbsp oil in a wok or skillet over high heat.

    • Sear shrimp for 1–2 minutes per side until pink. Remove and set aside.

  2. Scramble Eggs:

    • In the same pan, add a bit more oil if needed. Pour in beaten eggs and scramble until just set. Remove and set aside with shrimp.

  3. Stir-Fry Veggies:

    • Add remaining oil, then sauté garlic and carrots for 1–2 minutes until slightly soft.

    • Add peas and green onions, stir-frying for another minute.

  4. Combine Rice & Seasonings:

    • Break up cold rice with your hands and add to the pan. Stir-fry for 2–3 minutes, pressing clumps to separate.

    • Add soy sauce, oyster sauce, sugar, and sesame oil. Toss evenly.

  5. Finish:

    • Return shrimp and eggs to the pan. Mix well and cook for another 1–2 minutes.

    • Taste and adjust seasoning (more soy sauce or pepper if needed).

  6. Serve:

    • Garnish with extra green onions and a drizzle of sesame oil if desired.


Tips for Perfect Fried Rice

✅ Use cold rice (freshly cooked rice is too sticky—chill it first!).
✅ High heat = better texture (prevents soggy rice).
✅ Customize: Add diced bell peppers, corn, or swap shrimp for chicken/char siu.
✅ For more wok hei (smoky flavor): Let rice sit undisturbed for 30 seconds to crisp slightly.


Variations

  • Spicy: Add a dash of sriracha or chili oil.

  • Thai-style: Use fish sauce + a squeeze of lime.

  • Pineapple Shrimp Fried Rice: Add diced pineapple for sweetness.
