Oatmeal Raisin Cookie Bars

All the cozy flavors of classic oatmeal raisin cookies—but in soft, chewy bar form! Perfect for bake sales or lazy bakers.


📝 Ingredients *(9×9-inch pan, makes 12-16 bars)*

  • 1 cup (225g) unsalted butter, softened

  • 1 cup (200g) brown sugar, packed

  • ½ cup (100g) granulated sugar

  • 2 large eggs, room temp

  • 1 tbsp vanilla extract

  • 1½ cups (190g) all-purpose flour

  • 1 tsp cinnamon

  • ½ tsp baking soda

  • ½ tsp salt

  • 3 cups (240g) old-fashioned rolled oats (not instant)

  • 1 cup (150g) raisins (or sub dried cranberries or chocolate chips!)

(Optional: ½ cup chopped walnuts or pecans for crunch.)


👩‍🍳 Instructions

1️⃣ Prep & Mix Wet Ingredients:

  • Preheat oven to 350°F (175°C). Line a 9×9-inch pan with parchment paper.

  • In a large bowl, beat butter, brown sugar, and granulated sugar until fluffy (~2 mins).

  • Add eggs and vanilla; mix until smooth.

2️⃣ Add Dry Ingredients:

  • Whisk together flour, cinnamon, baking soda, and salt. Gradually mix into wet ingredients.

  • Fold in oats and raisins (and nuts if using).

3️⃣ Bake:

  • Press dough evenly into the pan. Bake 25-30 mins until golden at the edges.

  • Let cool 15 mins in pan, then lift out and cut into bars.


✨ Pro Tips

✔ For gooey bars: Underbake by 2-3 mins—they’ll firm up as they cool.
✔ Soften raisins: Soak in warm water (or rum!) for 10 mins, then drain.
✔ Storage: Keep airtight for 5 days or freeze for 3 months.
