Golden Cheese Bread (Pão de Queijo-Style Swirl Loaf)

A fluffy, buttery yeasted bread with molten cheese swirls—crispy outside, pull-apart tender inside!


📝 Ingredients

Dough

  • 3 cups (375g) bread flour (or all-purpose)

  • 1 tsp instant yeast

  • 1 tbsp sugar

  • 1 tsp salt

  • 1 cup (240ml) warm milk (110°F/43°C)

  • 1 large egg, room temp

  • 3 tbsp unsalted butter, melted

Cheese Filling

  • 1 ½ cups (150g) shredded cheese (mix mozzarella + cheddar or Gruyère)

  • 2 tbsp grated Parmesan

  • 1 tsp garlic powder (optional)

  • 1 tbsp chopped parsley

Topping

  • 1 egg yolk + 1 tbsp milk (for egg wash)

  • Extra cheese & flaky salt


👩🍳 Instructions

1️⃣ Make dough:

  • Whisk flour, yeast, sugar, and salt.

  • Add warm milk, egg, and melted butter. Mix to form a shaggy dough.

  • Knead 8-10 mins (stand mixer or by hand) until smooth. Cover, rise 1 hour (until doubled).

2️⃣ Roll & fill:

  • Punch down dough. Roll into a 12×16-inch rectangle.

  • Sprinkle cheese mixture evenly, leaving a 1-inch border.

  • Roll tightly (like a cinnamon roll), seal the edge, and place seam-side down in a greased 9×5-inch loaf pan.

3️⃣ Final rise: Cover, let rise 30-45 mins (until puffy).

4️⃣ Bake:

  • Brush with egg wash, top with extra cheese.

  • Bake at 375°F (190°C) for 25-30 mins (golden brown, cheese bubbling).

  • Cool 10 mins before slicing.

✔ Spicy twist? Add 1 tsp chili flakes to the filling.
