Cheesy Beef Stuffed Potatoes

These loaded baked potatoes are packed with savory ground beef, melty cheese, and crispy skins—comfort food at its finest!


Ingredients

  • 4 large russet potatoes (scrubbed clean)

  • 1 lb (450g) ground beef (80/20 for best flavor)

  • 1 small onion, finely diced

  • 2 garlic cloves, minced

  • 1 tbsp olive oil

  • 1 tsp smoked paprika

  • ½ tsp cumin

  • ½ tsp salt

  • ¼ tsp black pepper

  • 1 cup shredded cheddar cheese (plus extra for topping)

  • ½ cup sour cream

  • 2 tbsp butter

  • 2 green onions, sliced (for garnish)

  • Optional add-ins:

    • Diced bell peppers

    • Jalapeños for heat

    • Crispy bacon bits


Instructions

  1. Bake the Potatoes

    • Preheat oven to 400°F (200°C).

    • Rub potatoes with olive oil and salt, then prick with a fork.

    • Bake directly on the rack for 50-60 minutes until tender.

  2. Cook the Beef Filling

    • Heat oil in a skillet over medium-high heat.

    • Sauté onion for 3 minutes until soft, then add garlic for 30 seconds.

    • Add ground beef, breaking it apart. Cook until browned.

    • Stir in paprika, cumin, salt & pepper. Drain excess fat if needed.

  3. Prepare the Potatoes

    • Slice each potato lengthwise and scoop out the insides, leaving a ½-inch shell.

    • Mash the scooped potato with butter, sour cream, and ½ cup cheese.

    • Fold in the beef mixture.

  4. Stuff & Bake Again

    • Fill potato shells with the beef-potato mix.

    • Top with extra cheese.

    • Return to oven for 10-15 minutes until cheese melts.

    • Broil for 2-3 minutes for a golden crust (watch closely!).

  5. Garnish & Serve

    • Sprinkle with green onions.

    • Add extra sour cream or hot sauce if desired.
