Ultimate Shrimp Grilled Cheese with Garlic Bread

This gourmet twist on classic grilled cheese features garlic-butter shrimp, melty cheese, and crispy golden bread—pure indulgence in every bite!


Ingredients (for 2 sandwiches)

For the Garlic Butter Shrimp:

  • ½ lb large shrimp, peeled & deveined

  • 2 tbsp butter

  • 3 garlic cloves, minced

  • 1 tbsp lemon juice

  • ½ tsp paprika

  • ¼ tsp red pepper flakes (optional)

  • Salt & pepper to taste

For the Sandwich:

  • 4 slices thick sourdough or Italian bread

  • 3 tbsp garlic butter (softened butter + 1 minced garlic clove + parsley)

  • 1 cup shredded mozzarella (for stretch)

  • ½ cup shredded sharp cheddar (for tang)

  • ¼ cup grated Parmesan

  • 2 tbsp mayonnaise (for crispy bread)

  • 2 tbsp chopped fresh parsley


Instructions

  1. Cook the Shrimp:

    • Heat butter in a skillet over medium-high.

    • Add garlic, shrimp, paprika, red pepper flakes, salt & pepper.

    • Cook 2-3 minutes per side until pink.

    • Drizzle with lemon juice, then chop shrimp into bite-sized pieces.

  2. Build the Sandwich:

    • Spread garlic butter on one side of each bread slice.

    • On the unbuttered side, layer:

      • Mozzarella + cheddar

      • Shrimp

      • Parmesan + parsley

    • Close sandwiches (garlic butter side out).

  3. Grill to Perfection:

    • Heat a skillet over medium-low.

    • Spread mayonnaise on the outer bread slices (for extra crispiness!).

    • Cook 3-4 minutes per side, pressing lightly, until golden brown and cheese melts.

  4. Serve Immediately with:

    • Lemon wedges

    • Marinara or sriracha mayo for dipping
