Walking Taco Bake

All the crave-worthy flavors of walking tacos—in an easy, cheesy casserole! Perfect for game day, potlucks, or fuss-free dinners.


📝 Ingredients *(Serves 6-8)*

Base Layer

  • 1 lb (450g) ground beef (or turkey/chicken)

  • 1 packet (1 oz) taco seasoning (or homemade: 1 tsp each chili powder, cumin, paprika + ½ tsp garlic powder, onion powder, salt)

  • 1 cup water

  • 1 can (15 oz) black beans, drained/rinsed

  • 1 cup corn kernels (fresh, canned, or frozen)

  • 1 small onion, diced

Crunchy Topping

  • 4 cups crushed corn chips (like Fritos or Doritos)

  • 2 cups shredded cheddar cheese

  • 1 cup diced tomatoes

  • ½ cup sliced black olives (optional)

  • 2 green onions, sliced

For Serving

  • Sour cream

  • Guacamole

  • Salsa

  • Pickled jalapeños


👩‍🍳 Instructions

1. Cook the Filling

  1. Brown ground beef in a skillet over medium heat. Drain excess fat.

  2. Add onion, cook until soft (~3 mins). Stir in taco seasoning + water, simmer 5 mins.

  3. Mix in black beans and corn. Remove from heat.

2. Assemble the Bake

  1. Spread the meat mixture in a 9×13-inch baking dish.

  2. Top with crushed chips, then sprinkle with cheese.

  3. Add tomatoes, olives, and green onions.

3. Bake & Serve

  1. Bake at 375°F (190°C) for 10-15 mins until cheese melts.

  2. Let cool 5 mins, then serve with sour cream, guacamole, and salsa.
