Garlic Butter Grilled Chicken Sandwich

Juicy grilled chicken, garlic butter-toasted bread, and fresh veggies make this the ultimate quick & flavorful sandwich—ready in 20 minutes!


Ingredients (Serves 2)

For the Garlic Butter Chicken:

  • 2 boneless, skinless chicken breasts (or thighs)

  • 2 tbsp butter, melted

  • 3 garlic cloves, minced

  • 1 tsp lemon juice

  • ½ tsp paprika

  • ½ tsp salt

  • ¼ tsp black pepper

For Assembly:

  • 4 slices crusty bread (sourdough, ciabatta, or brioche)

  • 2 tbsp garlic butter (see notes)

  • 4 lettuce leaves (romaine, butter, or iceberg)

  • 1 large tomato, sliced

  • 2 tbsp mayo (optional)

  • 1 tsp Dijon mustard (optional)


Instructions

1. Marinate & Grill the Chicken

  1. Mix melted butter, garlic, lemon juice, paprika, salt, and pepper. Coat chicken evenly.

  2. Grill on medium-high heat for 5-6 mins per side until cooked through (165°F/74°C internally). Slice thinly.

2. Toast the Bread

  • Spread garlic butter on bread slices. Toast in a pan or oven until golden.

3. Assemble

  1. Spread mayo/mustard on bread (if using).

  2. Layer lettuce → tomato → sliced chicken.

  3. Top with second bread slice and press gently.

4. Serve

  • Cut in half and enjoy immediately!
