Crunchy Carrot Salad with Pineapple & Walnuts

This sweet, tangy, and refreshing salad combines shredded carrots, juicy pineapple, and toasted walnuts for the perfect balance of flavors and textures—great as a side dish or light lunch!


Ingredients

  • 4 cups (about 4 large) carrots, peeled and shredded

  • 1 cup (150g) fresh pineapple, diced (or canned, drained)

  • ½ cup (60g) walnuts, toasted & roughly chopped

  • ¼ cup (40g) raisins or dried cranberries (optional but delicious!)

  • 2 tbsp fresh parsley or mint, chopped (for brightness)

Dressing:

  • 3 tbsp mayonnaise (or Greek yogurt for a lighter version)

  • 1 tbsp honey or maple syrup

  • 1 tbsp apple cider vinegar or lemon juice

  • ½ tsp ground cinnamon (optional, adds warmth)

  • Salt & pepper to taste

*(Serves 4-6 as a side dish)*


Instructions

1. Toast the Walnuts

  • In a dry skillet, toast walnuts over medium heat for 3-4 minutes, stirring often, until fragrant. Let cool.

2. Make the Dressing

  • In a small bowl, whisk together mayonnaise, honey, vinegar, cinnamon, salt, and pepper.

3. Assemble the Salad

  1. In a large bowl, combine shredded carrots, pineapple, walnuts, raisins, and herbs.

  2. Pour dressing over and toss gently to coat.

  3. Chill for at least 30 minutes (or up to 2 hours) to let flavors meld.
