Zesty Lime Shrimp and Avocado Salad

A refreshing, protein-packed salad with juicy shrimp, creamy avocado, and a tangy lime dressing—ready in 15 minutes!


Ingredients:

  • 1 lb cooked shrimp, peeled & deveined (chilled)

  • 2 ripe avocados, diced

  • 1 cup cherry tomatoes, halved

  • ½ red onion, thinly sliced

  • ¼ cup fresh cilantro, chopped

  • 1 jalapeño, seeded & minced (optional)

For the Lime Dressing:

  • 3 tbsp lime juice (about 2 limes)

  • 2 tbsp olive oil

  • 1 tsp honey or agave

  • 1 clove garlic, minced

  • ½ tsp cumin

  • ½ tsp salt

  • ¼ tsp black pepper


Instructions:

  1. Whisk dressing ingredients in a small bowl.

  2. Gently toss shrimp, avocado, tomatoes, onion, cilantro, and jalapeño in a large bowl.

  3. Drizzle with dressing and fold gently (avoid mashing the avocado).

  4. Chill 10 mins for flavors to meld. Serve with tortilla chips or over greens!


Tips:

🌶 Spice it up: Add a pinch of chili powder or extra jalapeño.
🥭 Tropical twist: Toss in diced mango or pineapple.
🕒 Meal prep: Keep dressing separate until ready to eat.
