Here’s a flavor-packed, easy-cleanup Shrimp, Corn, Potatoes, and Smoked Sausage Foil Pack recipe—perfect for grilling, campfires, or baking in the oven. Everything cooks together in a buttery, Cajun-spiced sauce for a fuss-free meal!

Shrimp, Corn, Potatoes & Smoked Sausage Foil Pack

Serves 4 | Prep: 15 mins | Cook: 25–30 mins

Ingredients

  • 1 lb large shrimp, peeled & deveined (tail-on optional)

  • 12 oz smoked sausage (Andouille or kielbasa), sliced into coins

  • 1 lb baby potatoes, halved (or diced Yukon golds)

  • 2 ears corn, cut into 4 pieces each

  • 1 bell pepper, diced (any color)

  • 1/2 red onion, sliced

  • 4 tbsp butter, melted

  • 2 tbsp olive oil

  • 2 tsp Cajun seasoning (or Old Bay)

  • 1 tsp garlic powder

  • 1 tsp smoked paprika

  • 1/2 tsp dried thyme

  • 1/2 tsp black pepper

  • 1/4 tsp red pepper flakes (optional)

  • 1 tbsp lemon juice

  • Fresh parsley or green onions, chopped (for garnish)

  • Lemon wedges, for serving

Equipment

  • Heavy-duty aluminum foil or parchment paper


Instructions

  1. Prep the Foil Packs

    • Tear off 4 large sheets of foil (about 12×18 inches each).

    • Divide potatoes, corn, bell pepper, onion, and sausage evenly among the foil sheets.

  2. Season & Drizzle

    • In a bowl, mix melted butter, olive oil, Cajun seasoning, garlic powder, paprika, thyme, black pepper, and red pepper flakes.

    • Drizzle 3/4 of the sauce over the veggies/sausage and toss lightly.

  3. Seal the Packs

    • Fold foil over the mixture and crimp edges tightly to seal (leave room for steam).

  4. Cook

    • Grill method: Place packs on a medium-high grill (400°F/200°C) for 20 mins.

    • Oven method: Bake at 400°F (200°C) for 25 mins.

    • Carefully open packs, add shrimp, and drizzle with remaining sauce + lemon juice. Reseal and cook 5–7 more mins until shrimp are pink.

  5. Serve

    • Garnish with parsley and serve with lemon wedges (and crusty bread to soak up juices!).


Tips for Success

✅ Par-cook potatoes (microwave 3–4 mins) if using larger chunks.
🔥 Charred flavor? Open packs at the end and grill 2 mins uncovered.
🌶️ Extra heat? Add a dash of hot sauce or extra Cajun seasoning.
