Ingredients (Serves 4–6)
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 white onion, sliced
- 1 can (14.5 oz) diced tomatoes
- 2 lbs sirloin steak, cut into thin strips
- 2 tsp garlic, minced
- 2 tbsp olive oil
- ⅔ cup hot water
- ¼ cup soy sauce (or tamari for gluten-free)
- 2 tbsp brown sugar (or honey)
- 1 tsp ginger, grated (optional)
- 2 tbsp cornstarch (for thickening, mixed with ¼ cup water)
- Salt & black pepper to taste
Instructions
- Sear the Steak: Heat olive oil in a skillet over medium-high heat. Add the steak strips and sear for 2–3 minutes until browned (no need to cook through). Transfer to the slow cooker.
- Add Veggies & Liquids:
- Place sliced peppers and onions over the steak.
- Pour in diced tomatoes, soy sauce, hot water, brown sugar, garlic, and ginger. Stir gently.
- Cook: Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours until beef is tender.
- Thicken Sauce (Optional):
- Mix cornstarch with ¼ cup cold water and stir into the slow cooker.
- Cook uncovered on HIGH for 15–20 minutes until thickened.
- Serve: Taste and adjust seasoning with salt & pepper. Serve over rice, noodles, or cauliflower rice.
