 Brisket Loaded Twice-Baked Potatoes – The Ultimate BBQ Side Dish

These smoky, cheesy, brisket-stuffed potatoes are a game-changer—crispy on the outside, creamy inside, and loaded with BBQ goodness. Perfect for leftovers or a showstopping side!


📝 Ingredients:

For the Potatoes:

  • 6 large russet potatoes (scrubbed clean)

  • 5 tbsp unsalted butter, softened (⅔ stick)

  • ½ cup sour cream

  • ½ cup shredded sharp cheddar cheese

  • ¼ cup heavy cream or milk

  • 1 tsp garlic powder

  • 1 tsp smoked paprika

  • ½ tsp salt

  • ½ tsp black pepper

  • 1 tbsp hot sauce (like Frank’s RedHot, optional)

For the Brisket Filling:

  • 1.5 cups chopped smoked brisket (or pulled pork/rib meat)

  • ¼ cup BBQ sauce (plus extra for drizzling)

Toppings:

  • ½ cup shredded cheddar cheese (for melting)

  • ¼ cup crispy fried onions

  • 2 tbsp sliced pickled jalapeños

  • Fresh chives or green onions, chopped


👨‍🍳 Instructions:

1. Bake the Potatoes:

  • Preheat oven to 400°F (200°C).

  • Prick potatoes with a fork, rub with oil, and bake 1 hour or until tender.

2. Scoop & Mix Filling:

  • Cut potatoes in half lengthwise. Scoop out flesh into a bowl, leaving a ¼-inch shell.

  • Mash potato flesh with butter, sour cream, cheddar, cream, garlic powder, paprika, salt, pepper, and hot sauce until smooth.

3. Stuff & Load:

  • Fold brisket and BBQ sauce into the mashed potato mixture.

  • Spoon filling back into potato shells, mounding it high.

  • Top with extra cheddar cheese.

4. Second Bake:

  • Return to oven for 15–20 mins at 375°F (190°C) until cheese melts and tops crisp.

5. Garnish & Serve:

  • Drizzle with BBQ sauce, then add crispy onions, jalapeños, and chives.
