🌮 Homemade Mexican Pizza – Taco Bell-Inspired, But Better! 🍕🔥

Crispy tortillas layered with spicy beef, refried beans, gooey cheese, and fresh toppings—just like the fast-food favorite, but fresh and customizable!


📝 Ingredients:

Meat Layer:

  • 1 lb lean ground beef (or turkey/plant-based crumbles)

  • 1 packet taco seasoning (1 oz) or homemade blend

  • ½ cup water

Base & Sauce:

  • 6 medium flour tortillas (or corn for gluten-free)

  • 1 can (16 oz) refried beans (or mash pinto beans)

  • 1 can (10 oz) red enchilada sauce (or quick homemade)

Cheese & Toppings:

  • 1 cup shredded cheddar cheese

  • 1 cup shredded pepper Jack cheese

  • 1 Roma tomato, diced

  • 1 green onion, sliced

  • Optional:

    • Sliced jalapeños

    • Black olives

    • Sour cream

    • Cilantro


👩‍🍳 Instructions:

1. Cook the Beef:

  • Brown ground beef in a skillet over medium heat. Drain fat.

  • Stir in taco seasoning + water, simmer for 5 mins until thickened. Set aside.

2. Crisp the Tortillas:

  • Brush both sides of tortillas with oil.

  • Air fry or bake at 400°F (200°C) for 3-4 mins per side until golden and crisp.

3. Layer the Pizzas:

  • First layer: Spread refried beans on a tortilla.

  • Second layer: Add seasoned beef, then drizzle with enchilada sauce.

  • Third layer: Top with a second tortilla, more sauce, and both cheeses.

4. Bake & Broil:

  • Bake at 400°F (200°C) for 5-7 mins until cheese melts.

  • Broil for 1-2 mins for bubbly, golden cheese.

5. Garnish & Serve:

  • Sprinkle with tomatoes, green onions, and other toppings.

  • Slice into wedges and enjoy!
