Peanut Butter Lunch Lady Cookies

Makes: 24 cookies
Prep Time: 10 mins
Bake Time: 10-12 mins

Ingredients:

  • ½ cup (1 stick) butter, softened

  • ½ cup creamy peanut butter

  • ½ cup granulated sugar

  • ½ cup brown sugar, packed

  • 1 large egg

  • ½ tsp vanilla extract

  • 1 ¼ cups all-purpose flour

  • ½ tsp baking soda

  • ½ tsp baking powder

  • ¼ tsp salt

(Optional: Roll in extra sugar before baking for that classic crinkly top!)


Instructions:

1. Preheat & Prep:

  • Preheat oven to 350°F (175°C).

  • Line a baking sheet with parchment paper.

2. Cream Wet Ingredients:

  • In a bowl, beat butter, peanut butter, granulated sugar, and brown sugar until fluffy.

  • Mix in egg and vanilla.

3. Add Dry Ingredients:

  • Whisk together flour, baking soda, baking powder, and salt.

  • Gradually mix into the wet ingredients until just combined.

4. Scoop & Bake:

  • Roll dough into 1-inch balls (optional: roll in sugar).

  • Place on baking sheet and flatten slightly with a fork in a crisscross pattern.

  • Bake for 10-12 mins until edges are lightly golden.

5. Cool & Enjoy!

  • Let cool on the pan for 2 mins, then transfer to a wire rack.

  • Serve with a glass of cold milk for the full lunch-lady experience! 🥛


💡 Tips for the Perfect Cookie:

✔ Extra soft? Underbake slightly (they firm up as they cool).
✔ Crunchy edges? Bake for 12-13 mins.
✔ Add-ins? Toss in chocolate chips or oats for fun variations!
